Purple corn is a common food crop in Southwest Molluca District (MBD). Aside to serving as staple food in MBD, purple corn is known to have various health benefits. Its deep purple pigment is rich in anthocyanins, a flavonoid known as a family of powerful antioxidants; that has protective properties against colon cancer. Aside to that, purple corn also contain natural moisturizer that can prevent skin cancer. This innovation promotes processed purple corn as a high value health food, marketed outside MBD. This has in turn, has attracted local farmers to grow more purple corn; resulted in improved farmers’ income, as well as improve the region’s food security.
